January 14th, 2013: Today I went shopping and got all kinds of goodies that I'm real excited to eat. Today isn't going to count as my first day of eating vegan, but did have my first meal, which was delicious, so I think it is worth documenting. So, for dinner I had a burrito with organic brown rice and canned black beans, along with some organic red bell pepper, organic green bell pepper, and onion cooked up fajita style. It was so good and I already know this is going to be my fall back entree from now on. On the side I had organic celery, organic baby carrots, and raw broccoli dipped in a roasted red pepper hummus and an organic apple. A bit later I had a handful of walnuts and some almond milk for a snack. So far, so delicious.
BREAKFAST
So, breakfast was tasty. I had a piece of organic whole wheat flax seed toast with almond butter, organic banana slices, and some vegan chocolate morsels. On the plate with that are some grapes and organic blueberries. The smoothie is made from frozen peaches, pineapple, strawberries, the leftover banana from my toast, a almond milk, and a handful of kale to get some veggies in there; that's what makes it such a lovely shade of green. Next time I might not put in the kale, or put a bit less in. The smoothie was okay, but could have been better. The toast and fruit were fantastic.

I took a picture of it this time before I folded up the burrito so you could see all the goodies inside. I also had a big salad in which I had organic romaine and kale, mixed with organic apples, grapes, organic blueberries, walnuts, and a mix that I bought that consists of peanuts, cashews, almonds,raisins, sunflower seeds, and pepitas. Yum.

NACHOS! Basically I took the rice and beans that were still leftover and I added in the green peppers, red peppers, some chili peppers, onion, and a bit of corn and voila! A whole meal. This is basically minimalist cooking at its finest, which I can definitely get behind.
