I went shopping and bought a bunch of stuff that I figured I would be able to eat. Just normal things like black beans and corn, and I bought a bag of potatoes because I love baked potatoes. When I got home I found that I usually eat my baked potatoes with cheese, bacon, and sour cream, all of which I cannot eat on a vegan diet. I had also found a black bean soup recipe that I thought sounded yummy. So I made that and while stewing over what I could eat with my baked potato (because I haven't ventured into vegan butter and cheese yet) I thought, well why don't I just put the soup on the baked potato in a gravy/goodness type of way.
And not to brag, but it was delicious.
This is the recipe that inspired the soup. I didn't make it exactly the same way because I went shopping before finding the recipe. But, I had most of the right stuff. Sorry the picture isn't all that great, but I dug in before thinking to take a picture, so I'd already eaten most of it.
Anyway, I'm probably going to be eating this a lot in the coming week because I have a whole lot of potatoes and a whole lot of soup.
